BRR! It’s too cold now to have cold lunches so often, so I’m kicking off this week with some lunches that require a microwave!
This one’s partially homemade: quinoa with turkey meatball & fish nuggets from Trader Joe’s, leftover roast veggies, and green beans.

Quinoa prepared fried-rice style with chicken, bell pepper, and drizzled in yakisoba sauce. Carrots, asparagus, and strawberries.

Quinoa salad with black beans, corn, tossed in an olive oil, lime, cumin, cayenne, balsamic vinegar, blood orange, dressing. Spicy almonds, carrots, jicama, strawberries & grapes.

Lightly stir-fried tofu & mushrooms in a sweet, soy sauce & mirin mixture over quinoa & peas. Steamed veggies & grapes.

Quinoa prepared fried-rice style in soy sauce, mirin, togarashi and egg. Lightly fried tofu and half a had-boiled egg for some extra protein. Steamed broccoli & frozen veggies and grapes.

Quinoa cooked in chicken broth topped with crisp bacon and mushrooms & asparagus (cooked in the bacon fat!). Fruit cup - strawberries and mango.

This one required a bit more cooking than my usual lunches.
Mini turkey hamburger steaks (which were actually failed attempts at meatballs) with quinoa cooked in chicken broth & asparagus, glazed carrots (eyeballed this recipe), and steamed French green beans.
Whew!
And, to keep up with my faux bento theme, I’ve pushed in some frozen veggie pieces into the meatball-patty hybrids and arranged some randomly on the quinoa.

This one required a bit more cooking than my usual lunches.
