BRR! It’s too cold now to have cold lunches so often, so I’m kicking off this week with some lunches that require a microwave!
This one’s partially homemade: quinoa with turkey meatball & fish nuggets from Trader Joe’s, leftover roast veggies, and green beans.

Sandwich wrap with pan-fried chicken, guacamole, and lettuce in a whole wheat/corn tortilla. Chestnuts, edamame, carrots, cucumbers, and mango.
While trying to do some pantry spring-cleaning, I ran out of proteins so I had to do some grocery shopping!

The tofu burgers were made with an herb/breadcrumb mixture I got from a Japanese market. And, yes! I got me a new cute bento box - just for cold/room temp lunches of course.
