Avocado Sonoma Chicken Salad - taken from YourHealthista. Very yummy and filling! Though, I forgot to add in the celery when I bought some just for this recipe.

Apple chardonnay chicken sausage, steamed brown jasmine rice, and sweet baby bell peppers & asparagus. Garnished with cilantro and grape tomatoes.

Tomorrow’s lunch: whole-wheat spaghetti pasta stir-fried Asian-style with the “hodgepodge” frozen veggies mix from TJ’s (includes baby corn, carrots,  water chestnuts, broccoli, mushrooms, sweet bell peppers, snap peas, and onion). To include some protein I added some sweet scrambled egg. Everything was tossed in the usual soy sauce, mirin, and togarashi, dash of sugar mix, then garnished with a sprinkle of furiake.

Here’s my lame, last-minute attempt at making my lunch look cute - using bits of sweet bell pepper on a slice of lite cheddar (for a sandwich - bread separate).
I’ve also started using silicone cupcake liners to separate foods and to add some color :).

Cheese (lite cheddar and a lite Baby Bel) with whole wheat crackers, cantaloupe, and cucumber slices. As with most of my lunches in box-shaped containers, I tried to arrange this in a faux-bento style. I even used some cute silicone dividers (though, probably not as designed).
I was really stoked to use my new Glasslock container pictured here. Hilariously enough, I compulsively bought this one at a grocery store - which meant it wasn’t very cost effective. A few days later, I found them at the nearby Ichiban Kan store for MUCH less. I caved in and got another one in a smaller size.
Bento boxes are super cute, but I’ve been a little iffy about toting and heating my lunches in plastic containers (says the person who still uses Tupperware). Plus, I’m always doubtful that they would ever hold enough food for my appetite!
