With a lot of carrots in the fridge - I really wanted to think of other ways to prepare them other than eat them raw. Kinpira is a yummy way to stir-fry veggies. I cheated a bit with this recipe by using frozen shredded hashbrowns. Still came out sweet, spicy, & tasty!

I had a hankerin’ for this chicken recipe. I sprinkled a bit of this awesome Japanese citron pepper into the almond meal breading in addition to squeezing some lime juice for some extra tang.
What’s really great about this recipe is that it still tastes great at room temperature - which is really handy since I’m always too hungry to heat up my food after my lunchtime workout (and, also I don’t want to heat up any food in plastic containers).
So today’s lunch included the chicken with diced avocado, apple slices and carrot sticks.

Whoa! How long has it been? Of course, I get lazy too sometimes, but still want to brown-bag my lunch. So I made a snack-plate kind of lunch after seeing this post on Your Healthista. It might not look like much, but it was quite filling!

Baked chicken nuggets breaded in panko and almond meal, purple potatoes, asparagus, and veggie sticks.

Hamburger potstickers! This was one of my most ambitious lunches yet - everything, including the wrappers are homemade. Wrappers made using this recipe, and instead of a traditional potsticker/gyoza filling, I was inspired by this recipe for cheeseburger dumplings.
The filling was made with ground beef, sauteed onions & mushrooms, parsley, pepper, a mix of chili salts, and mustard.
Wedged between them are pieces of steamed purple sweet potatoes. Second tier includes the usual veggie suspects.

Sandwich wrap with pan-fried chicken, guacamole, and lettuce in a whole wheat/corn tortilla. Chestnuts, edamame, carrots, cucumbers, and mango.
While trying to do some pantry spring-cleaning, I ran out of proteins so I had to do some grocery shopping!
