Scrambled egg white, carrot and potato kinpira, apple slices, diced avo, and a cherry tomato.
With a lot of carrots in the fridge - I really wanted to think of other ways to prepare them other than eat them raw. Kinpira is a yummy way to stir-fry veggies. I cheated a bit with this recipe by using frozen shredded hashbrowns. Still came out sweet, spicy, & tasty!
